Taco night is a staple in our house at least once a week. These collard wraps are awesome! So healthy and filling and yummy! They are super quick to make and are portable, one of my favorite hiking lunches (or packed lunch in general) because I can quickly throw them together fast in the morning, provide me with lasting energy, and don’t get soggy like sandwich bread can!
Collards are hearty and easier to wrap because they stay together better than lettuce or other greens wrapping methods. Trust me, I’ve tried many methods. I honestly don’t know how they make the lettuce wraps work so well at restaurants!

2 minute guacamole! 3 ingredients! Super simple guacamole cannot be emphasized enough. Plus it is creamy, delightful, and healthy.
It is best tasting served with Margaritas of course ;). But also makes a great healthy snack.

This Tuscan Bean Dish is one of those great happy accident discoveries that came out of trying to cook up something yummy for my Mom from what was available in her fridge and pantry. It has been tweaked and perfected, and it is just delightful. I have served it to her and myself many times since then, it is one of our main go to’s.
I love the Italian inspired flavors in this dish, anything Italian food is my favorite. I mean seriously, who doesn’t love Italian?

This vegan Curry Cauliflower soup is so smooth, creamy, and flavorful!
It is also filling, low calorie, and vegan. Win-win-win-win.
Here in the northwest we are having our typical June weather full of days with the dreaded June Gloom. These are days when the clouds just hang there. It doesn’t rain, it’s not sunny, and somehow it is much more depressing and “gloomy” than if it were just out and out pouring buckets. It makes me just want to sleep in and be cuddly. So while it may feel silly to think of soup in summer, here in the pacific northwest there are many days it feels comforting still.
This soup is so creamy, you would never know it’s mostly cauliflower. It has a wonderful flavor kick, and the pumpkin seeds sprinkled on top add a nice crunch and texture complexity.

This salad. I have had this kale and white bean salad for lunch most days of the last few months (yes, months!), and many times before that as well. There is just something so satisfying about it. It is filling and hearty, but light. It also helps that it is super simple!
This salad is incredibly easy to make, and also unique in that it is easy to keep all the ingredients on hand. Even the fresh kale is a hearty vegetable and will last longer in the fridge than most other salad ingredients. Also it travels well after it has been prepared, making it a great lunch or any on the go meal. It will even keep for a couple days after fully prepared. I love to make this as a potluck type dish to share too, it always goes over well (plus then I always insure I have something healthy to eat there).
