
I have always LOVED a good Italian salad. Italian dressing is my favorite kind of dressing (well, lets face it, pretty much everything Italian food is my favorite). There was even a time in my life that instead of snacking on chips as a teenager, I would crave a giant pile of iceberg lettuce with my favorite Italian dressing on top. Italian wedge salad? No? Ok it’s weird, I know. Perhaps I have shared too much….
Anyhoo, this salad is super delish and healthy. It is fantastic as either a main dish for lunch or dinner, or as a side salad to go with your pasta dinner.

Chopping ingredients small for this one allows all the great flavors and textures to blend together and make their way onto every fork full.

One of this salads key ingredients is artichoke hearts. Oh how I love them! They add so much dimension and interesting flavor to any salad. For this salad in particular, they work exceptionally well. Artichokes also have many nutrition benefits.
Nutrition Highlights of Artichokes:
– Fiber. They are very high in fiber, which most of us need more of in our diets. Did you know fiber helps lower bad (LDL) cholesterol? The LDL cholesterol binds to the fiber and leaves the system.
– Antioxidants. They have a high concentration of antioxidants.
– Folic Acid. They are also quite high in Folic Acid, which is especially important for prenatal nutrition.
– Copper. They are notably high in copper, which is needed for red blood cell production.

My current favorite salad dressing is Tessamae Italian Dressing. It has only healthy organic ingredients such as olive oil instead of bad oils like canola, and it’s super yummy!

Chopped Italian Salad

Ingredients
- 2 big handfuls of Spinach
- 1 heart of Romaine head, chopped
- 1/2 English Cucumber, diced
- 1/2 Avocado, diced
- 1/2 cup Cherry Tomatoes, halved
- 1/2 cup canned Artichoke Hearts, chopped
- 1/4 cup Black Olives, sliced
- Salt to taste
- Pepper to taste
- 2 Tbls Italian Dressing (Tessamae)
- 2 Tbls Pine Nuts
Instructions
- Chop Romaine Hearts and Spinach. Put in large bowl (large enough to toss).
- Dice Cucumber and Avocado.
- Halve Cherry Tomatoes.
- Chop Artichoke Hearts.
- Add black olives, salt, pepper, and dressing.
- Toss thoroughly with tongs.
- Top with Pine Nuts.
