Hello again! Long time, no see. My bad, I fell out of the habit and then felt uninspired to continue with this blog. But I still think of it often, wanting to get back into it, and now I have inspiration again! I guess I needed a personal gimmick to get started again, and I decided a goal I made for myself this year would also be a good thing to blog about.
I made many goals for myself this year. Most of them are based around activities I want to incorporate more regularly into my life, things I want to learn, and things I want to get better at. One of my main desires is to expand my cooking repertoire and learn to cook a larger variety things! And to get out of the sad rut of repeating the same five recipes over and over and over again.
So I have made myself a goal to cook 52 new recipes: the idea being one new recipe per week. Now some weeks I know I won’t make it happen, but others I’ll get a couple in. Hopefully in general it will be a part of my weekly routine.
Unfortunately I didn’t take a picture of the first 3 recipes (and yes, if you are keeping track that also means I am behind already since this is now the 6th week of the year, but I have plans to catch up quickly). Maybe I will make those recipes again and photograph them, but here are the links to the recipes I tried already.

All three were good enough I would totally make them again. Number 2 and 3 we put together with quinoa, black beans, and topped with pumpkin seeds and Cholula hot sauce for a quinoa bowl. The combo was delish! I enjoyed and was pleased with the tofu recipe in particular, since I like tofu but haven’t managed to make a version at home that I enjoy until now.
I look forward to completing this goal and having 52 new recipes under my belt. Hopefully you will enjoy some as well, or at least enjoy some of the journey with me. Also putting it out there will keep me honest so that I keep it up!
Lastly, a DISCLAIMER: Do NOT expect the best of pictures for this project! I will only being taking pictures after a long day at work and right before devouring the contents of said picture, so putting a lot of time and effort into a proper photographs composition and lighting is not going to happen;)
